Orange Chocolate Brownie

This delicious recipe is in collaboration with Mackies of Scotland to create this Christmas Orange Chocolate Brownie with Mackies Orange chocolate and their well known Traditional Ice cream. It’s the perfect recipe for Christmas day!

This recipe uses the NEW Orange chocolate by Mackies of Scotland and their Traditional Ice Cream on the top. It’s such a delicious Christmas treat and if your making it for Christmas day you can save time by making it ahead too.

This recipe will be using the NEW Orange Chocolate bar and traditional Ice Cream from Mackies of Scotland. The traditional ice cream works really well with the orange brownie and you can serve the brownie warm or cold it works both ways. All you have to do on Christmas day or whenever your having this treat is take out your chocolate brownie from the fridge, warm it up in the oven if nessecary, melt the chocolate sauce and mix with the double cream. It really is so simple but delicious and impressive on the Christmas table.

Tips for making recipes:

  • You can make this recipe ahead of time and store the brownies in the fridge. They can be warmed up in a warm oven for 10 minutes or until warm and served up with the ice cream and sauce on the day. The sauce can be made just before serving.
  • You could also add in some nuts into this brownie to give it a crunch. I like the sticky stodgy brownie texture and don’t add nuts for the kids but some walnuts may work well in this recipe.
  • Let the brownie cool before lifting it out and cutting it up in slices. You really need to leave it to firm up before slicing or you may break it easily.
  • If you are serving the brownie warm don’t add the ice cream until it is ready to serve up as it will melt on the warm brownie. It is delicious all melted on the brownie but you want to scoop and serve straight away with the sauce on the side to drizzle.
  • There are no exact quantities for the sauce just add in enough double cream to the melted chocolate to get the consistency you desire. Serve out of the warm bowl when ready to eat.
  • The marmelade glaze works really well on the top of the brownie when you add it after its taken out of the oven but you don’t have to add this if you don’t want extra marmalade taste.
  • The baked orange slices in this recipe are mostly for decoration but you can chew on them if you like.

Mackies Orange Chocolate Brownie Recipe

This recipe makes 6 large portions of brownie.

Brownie Ingredients:

  • 300g Mackies Orange Chocolate
  • 200g unsalted butter
  • 4 eggs
  • 150g light muscovado sugar
  • 125g self raising flour & 1tbsp
  • 125g cream cheese
  • 1tbsp caster sugar
  • 2-4tbsp marmalade

Brownie Topping:

  • Mackies Traditional Ice Cream
  • Christmassy Sprinkles for decorating (optional)
  • Edible Glitter Spray or Sprinkles
  • 1 Orange sliced
  • Caster Sugar

Brownie Sauce:

100g Mackies Chocolate Orange

Double Cream (about 4-6tbsp)

Recipe Instructions:

  1. Set the oven to 180oc (fan oven) and grease up your brownie pan.
  2. Add the chocolate and butter into a large glass bowl and place over a steaming hot pan of simmering water.
  3. Stir the chocolate and the butter until it is melted. Be very careful at this point when dealing with the hot water.
  4. Place the bowl of melted chocolate aside to cool and follow the next steps of blending the other brownie ingredients.
  5. Add three of the eggs and the light muscovado sugar to a large bowl and whisk well using an electric whisk or a hand held whisk until the mixture looks thick and frothy in consistency.
  6. Add the flour and whisk lightly just until the flour is blended.
  7. Pour this brownie batter into your greased brownie tin.
  8. Mix the cream cheese with the remaining egg, 1tbsp of flour and 1 tbsp of caster sugar until completely smooth. Dot 6 tbsp of this mixture evenly across the brownie as per the video.
  9. Add the marmalade into a jug and break apart. Dot 6tsp of this marmalde on top of each cream cheese blob.
  10. Using a pin swirl through the cream cheese and marmalade on the surface of the brownie creating a beautiful texture.
  11. Bake in the oven for 25-20minutes until cooked through and golden brown on the top.
  12. Leave the brownie to cool completely for around 10-20minutes. Then lift out of the pan and slice into 6 large brownie slices.
  13. While the brownie is cooling place the orange slices on a tray and sprinkle with caster sugar on both sides. Bake in the oven for about 15 – 20 minutes until dried out.
  14. Melt the brownie topping chocolate in a bowl similiar to the previous method. Once melted whisk in enough double cream to create a thick chocolate sauce.
  15. Serve the slice of brownie up on a plate with a scoop of Traditional Mackies Ice Cream and drizzle with the chocolate sauce.
  16. Spray the glitter spray or sprinkle over the brownie, add the orange slices and sprinkle any other christmas sprinkles and serve immediately.
