Heather Honey & Oat Pancakes

These Scottish Heather Honey and Oat Pancakes are so easy to make and are really delicious for breakfast with fresh fruit and a drizzle of raw honey or maple syrup. They are fluffy and light and are so quick and easy to make for breakfast.

These traditional Scottish pancakes are so easy to throw together and make a delicious quick breakfast with fruit. The kids also love to eat them for snacks and I love them with some grated Scottish cheddar.

I would serve these up with slices of banana, apple, pear or even some stewed fruit. A drizzle of raw honey and maybe a sprinkle nuts or seeds works well too. We love to enjoy these with sliced pears they are so delicious!

Tips for making this delicious recipe:

  • Once you have made up the batter let it sit for a few minutes, I always find it makes better pancakes if its left for a little while.
  • You can serve these up with a quick fresh fruit salad or stew some fruit up in the pan with a dash of water and honey. A sprinkle of cinnamon works well too.
  • These keep really well once made in an airtight container, that is of course if there are any left after making them, my kids also enjoy them for snacks with a little cheese.
  • As suggested above they go really well with a simple crowdie cheese and we love making crowdie with milk that is nearly out of date. Its the perfect combination.

Heather Honey & Oat Pancakes Recipe:

  • 100g plain flour
  • 1/2tsp baking powder
  • 1/2 tsp cream of tartar
  • 1tbsp Scottish Heather Honey
  • 1 tbsp caster sugar
  • 1 egg
  • 2tbsp rolled porridge oats
  • whole milk (2tbsp approx)
  • butter
  • fruit to serve

Recipe Instructions:

  1. Add the flour, baking powder, cream of tartar, oats and caster sugar into a large bowl and mix through well.
  2. Add in the egg and honey and whisk through.
  3. Add in enough milk to create a thick batter. This is approximately 2 tablespoons of milk but may be more.
  4. Melt in a tbsp or two of butter in a large flat frying pan on a medium heat and drop in about 2 tbsp to create each pancake.
  5. When there are bubbles forming on the top of the pancake flip it over and cook on the other side for a few minutes.
  6. Serve with fresh fruit and a drizzle of honey.
