Goan Vegetable Curry

Oh this was soooo yummy!  Lots of fresh colourful vegetables with a little tofu cooked in a Goan Curry paste and coconut milk.  This has got to be one of my new favourite recipes, its so easy to make (as most of my recipes are) and is really delicious and nutritious.  I had a wholemeal flatbread on the side with this dish and it was perfect for dipping in the coconut sauce mmm.  You could also serve this with some brown rice and a few salad items.

Ingredients

Coconut Oil 2 x tbsp

Chopped garlic cloves x 3-4

Fresh Lemongrass (tbsp of chopped)

Galangal (thumb piece of)

Sliced 2 x small red/green chillies

Onions

Broccoli

Colourful Peppers

Courgettes

Goan Curry Paste 3-4tbsp

Coconut Milk x 1 tin

Soy Sauce

Tofu or marinated tofu pieces

Coconut Sugar (Optional)

Stir fry the garlic, lemongrass, galangal, chilies and onions for 5-10 minutes on a medium heat.  Add the remaining vegetables and cook through with some additional water until almost tender, add in the Goan curry paste and stir.  Add in the coconut milk and a little soy sauce and tofu pieces.  Season with salt, pepper and a dash of soy!  You can also add a little coconut sugar for sweetness if you like.  Cook through until tofu is warmed up.

Serve with rice, breads, salad and smiles!

Spaghetti Bolognese

I love this dish, the sauce is light but with a good flavour, you could also use this recipe to make a speedy lasagne!  I like to top mine with chopped chilies for some heat and some red onion or other salad ingredients but you could add chillies into the main cooking stage if you prefer.  I added some beans into this recipe but they are not essential, I was just using up some fridge ingredients.

Ingredients

Wholewheat pasta

Garlic

Chilies (optional)

Onion

Carrots chopped into small cubes

Celery chopped into small pieces

Green Pepper chopped into small cubes

Vegetable Stock

Lentils

Beans (optional)

Tomato Puree x 4 tbsp

Tinned Tomatoes

Oregano (dried or fresh or parsley)

Chill powder (optional)

Salt & Pepper

Cook the wholewheat spaghetti in boiling salted water for around 15 minutes until cooked through.  Meanwhile cook up the chopped garlic, onions and chillies (optional) for a few minutes then add in the rest of the chopped vegetables and a little vegetable stock to simmer away until cooked.  Add in the lentils, tomato puree and tinned tomatoes and simmer away for a few minutes then add in the herbs (oregano).  Add in a little chilli powder to spice it up if you wish at the end.  Add in extra stock to create enough sauce and simmer to thicken.  Serve with the cooked pasta.

Mexican Veggie Wrap

I love Mexican food and especially easy mexican recipes!  I made this really quick meal tonight for myself.  You could mix the veggies up a bit and use your own favourite vegetables.  It’s basically some garlic curly kale with mexican flavoured peppers and mushrooms with refried beans, homemade guacamole and homemade salsa.  I love using shiitake mushrooms, not only are they super nutritious but they are really meaty and a good replacement for the meaty meals! 🙂  I’ve broken the recipe up as follows:

Salsa

Cherry tomatoes

Lime

Red onion finely chopped

Chilies (optional, I left out as the kids were eating it)

Coriander chopped

Salt & pepper

Chop up all of the cherry tomatoes, blend very lightly if you wish, add in a squeeze of lime, finely chopped red onion, sliced chilies, and chopped coriander and season to serve.

Guacamole

Avocado

Lime

A spoon of salsa

Coriander

Salt and Pepper

Mash up a whole avocado or more if your making a bigger quantity.  Add in a squeeze of lime to your tastes, a spoon of the salsa, chopped coriander and season to serve.

Refried Beans

I used tinned mexican beans…mmm…you can make your own by mashing up pinto beans with stock garlic, water and seasonings.

Garlic Kale

Kale chopped

3 Garlic Cloves Chopped

Onion Chopped

Seasonings

Cook the kale up in a little water with the chopped garlic and onions and simmer until tender.  Season to serve.

Mexican Spiced Peppers & Meaty Mushrooms

Red Peppers Sliced

Onions Sliced

Shiitake or other meaty mushrooms sliced

Mexican Spice Mix

Fry up the peppers, onions and mushrooms in a little olive oil or water and add the spice mix to your tastes.  Season and serve.

Easy Vegetable & Bean Curry

This curry is super easy to make and so delicious and creamy!  There are loads of colourful vegetables and greens in this recipe and you could mix the vegetables up a bit depending on what you have available.  I served it with some brown rice or you could also use white or some cous cous.

Ingredients

3-4 cloves of Garlic

1 Onion

1 super hot sliced Chilli

Small bunch of Green Beans

1 Red Pepper

Mushrooms ( about 6)

Cannelini Beans ( half a tin)

Sweetcorn ( 4-5tbsp)

Two handfuls of chopped spinach

Curry Powder (4-5tbsp or to taste)

Cream (dairy free – oat or soy)

Brown Rice

Cucumber

Salt & Pepper

Chop up all the vegetables in small pieces, cook the garlic, onion, and sliced chilli in a little water or use some olive oil.  Add all the chopped vegetables apart from the spinach and simmer down for about 15-20 mins under everything is cooked through.  Add in the spinach, curry powder and seasonings and cook for about 5 mins.  Add in the dairy free cream of choice until the recipe is nice and creamy.

Sever with some brown rice and some chopped cooling salad items like cucumber or tomato.

Grey Berry Smoothie

Ok I know the colour is absolute yuk…but not all of my smoothies come out in beautiful pastel colours! lol! 😉

Super easy to make, simply blend all of the ingredients in the list and add in some of your own if you wish.

Ingredients

Handful of Blueberries

A few tbsp of live coconut yoghurt

A tbsp of Cacao Powder

Banana

A tsp of Super Mushroom powder (you could add in a Superfood Mushroom supplement of choice)

Chia Seeds

A splash of almond milk and Water

This is a super nutritious blend combined together.  Check out some of the links below for further research and information on these superfoods.

Cacao Powder

Cacao powder is chocolate in its raw and natural state, its super nutritious.  Click below for access to a really interesting article on the benefits of Cacao Powder.  There is loads of information online regarding the health benefits of Cacao, I would recommend doing further research in this area.  You can also make your own Raw healthy Chocolate with cacao powder…yes chocolate can be healthy.  You can buy Cacao Powder in the supermarket but I find its better value to buy it in bulk.  Check out the brand below for a high quality raw product.

Easy Fruit Salad with Chia

I used some Lemon Coconut yoghurt to make this awesome and super quick fruit salad with chia seeds and walnuts.  Me and the boys shared this after lunch and it was divine!

Ingredients

Chopped up fruit of choice

Coconut flavoured yoghurt or other dairy free yoghurt

Chia Seeds

Chopped nuts of choice

Maple Syrup (optional)

Basically all you need to do is chop up all of the fruit you wish to use and top with the yoghurt, sprinkle with some chia seeds and chopped nuts of choice and its ready to serve!  You could also drizzle a little maple syrup over the top if you wish for that sweet tooth family member.

Beetroot Juice

I made a really simple organic beetroot juice this morning!  It was divine!  This was a great choice for me to drink before my Step Aerobics, I felt so strong and energetic after this powerful antioxidant packed juice!

(I did share this massive glass with the kids)  😉

Ingredients:

4 Beetroots

1 whole pack of celery

2 lemons

2 large pieces of tumeric root

4 carrots

4 apples

Chop all the pieces and put through the juicer, it sometimes helps to add the softer items with the hard.  Drink immediately or store in a tightly sealed jar.  Check out some of the awesome ingredients below.

Tumeric is a powerful ingredient and is thought to be a great anti inflammatory.  You can purchase it in powder format but if your juicing it I would recommend getting the fresh root.  I’ve included some links for the powder and the root format, you can use both in smoothies but I would personally recommend the fresh for juicing.  You can also juice with a little pineapple to create an awesome tumeric shot! 😀

Chickpea Tuna Wrap

Approx Calories:

This is one of my favourite lunch items at the moment I just love it!  🙂  I’m always on the look out for new sandwich and wrap ideas for lunch and this one just hits the spot.  It’s light and you can also mix it up a bit by adding spring onions or perhaps some chopped celery into the mashed chickpeas.  You could also add a little mayonnaise or sweet chilli sauce for a different flavour.

Ingredients:

A carton or tin of chickpeas

A good squeeze of fresh lemon juice

Salt & Pepper

Optional (chopped celery, chopped spring onions)

Salad ingredients – chopped tomato, cucumber, red onion, lettuce etc.

Wrap of choice – I used an Italian flat bread

Mash the chickpeas together with the lemon juice and optional ingredients.  Season well and add into the wrap, top with the salad ingredients of choice and wrap and serve!  Enjoy!

Green Smoothie Matcha Bowl

I made an awesome green smoothie bowl this morning with several superfoods such as Green Matcha, Cacao Nibs and a sprinkle of Goji berries.  These foods are positively awesome and I felt so much energy after eating this bowl of colourful foods this morning.  I’ve provided some info at the bottom of this post about these superfoods and where you can purchase them.

I hope you enjoy this recipe, you can mix it up a bit with the greens and different plant milks etc.  Any questions drop me a line 😀

Ingredients:

2 Bananas

2 Tbsp of Coconut Yoghurt

A handful of spinach leaves

1 Tsp of Matcha

Almond milk – just enough to create a soup like consistency

Goji Berries

Cacao Nibs (Raw chocolate pieces)

Chia Seeds

Sliced fruit of choice

Blend all of the ingredients together adding the almond milk in slowly so you create a soup like texture.  Sprinkle the Goji berries, Cacao Nibs and Chia seeds on the top and add some sliced fruit of choice.  Enjoy!

Matcha powder is one of my favourite superfoods and is apparently one of the most powerful antioxidants on the planet.  It is thought that 1 serving of matcha tea is equivalent to 10 cups of green tea.

This needs to be purchased in high quality for best results, I have personally bought this brand in the past and it is really high quality and I would recommend it.

This is a really high quality matcha and is very expensive for the size of the tin but you really do get what you pay for when it comes to matcha, and this goes for green tea also.  This one is actually very reasonably priced for the size, I have paid much more for this brand before.

Three Easy Salad Recipes

I don’t make enough salads but when I do I really enjoy them!  Here are three very easy salads to make at home and they all compliment each other perfectly.  These are great as side dishes to a BBQ, Pizza or Greek style dinner night.  I just love all the beautiful colours they create together.  I’ve provided the recipes below, I haven’t added any specific quantities on some of the main ingredients as it’s always better in this case to tailor the desired quantity to your own tastes and diet requirements.  If you wish you can watch the recipe video on Natural Living YouTube Channel with assembly instructions, click on the link below.

Pita Bread Salad

Ingredients:

Pita Bread (cut into squares and lightly fried in olive oil)

Baby Gem Lettuce (chopped into square shaped bits)

Tomato

Cucumber

Green Pepper

Mint or Coriander (freshly chopped or other choice of herbs)

Red Wine Vinegar (about 2 tbsps)

2 tbsp olive oil (cold pressed & preferably organic)

Lemon Juice (about 1 lemon)

3 Tsps of Za’atar Herb Mix

Pomegranate Seeds (1 Pomegranate)

Himalayan Pink Salt or Sea Salt

Mix all the chopped and prepared ingredients together in a large bowl add the desired quantity of mixed dressing ingredients, season and serve with some additional herbs & perhaps a slice of lemon on the top to make it look all pretty.

Pomegranate Rice Salad

Ingredients:

Cooked Rice

Pomegranate seeds (1 pomegranate)

Juice of 1 Lemon

Chopped Fresh Parsley or coriander

Sliced Red Chillies

Sliced Red Onion

Himalayan Pink Salt

Black Pepper

Leave the rice to cool a little, then add in all the ingredients and season.  Serve with the other salads.

Tomato and Olive Salad

Ingredients:

Tomatoes

Freshly chopped basil, coriander or some parsley

Sliced Red Onion

Chopped mixed olives

Lemon Juice (about 1/2-1 lemon)

Olive Oil (around 2-4tbsp)

Pink Himalayan Salt or Sea Salt

Freshly Ground Pepper

Mix all the prepared ingredients together in a large bowl, add the seasonings and dressing ingredients to taste and serve with a sprinkle of additional herbs and extra olive oil if necessary.

…has many health benefits and you can even purchase it in larger supermarkets now.  Personally I would recommend getting your own grinder and buying it in bulk as it can be over priced in places.

Za’atar Herb Mix

You might be wondering what the ingredient Zatar is??  Well…its a middle eastern inspired herb mix which you can buy in bulk already premixed.  It’s awesome in salads, dressings, stews, bakes and once you have a batch it lasts a long time in the cupboard.  I would recommend the Greenfield’s brand of Za’atar.  It smells so delish!  Click on the image for further details.

Wrap Pesto Pizza

Wholemeal Wrap Pizza

A really simple lunch meal to make at the weekend or wrap it up for a packed lunch day! 🙂

It’s so easy to make, cook the mushrooms, onions and tomato first then lay the wrap onto a pancake maker or flat frying pan on a low heat.  Spread with pesto sauce, sprinkle with rocket leaves, add in the cooked mushrooms, onions and tomato and the remaining ingredients in quantities of your own choice.  Season with chopped chilli, salt, pepper and sauce of your liking.

Strawberry & Banana Smoothie Treat Bowl

Delicious strawberry and banana smoothie bowl made with the addition of maca powder and live coconut yoghurt.  The recipe is so easy, blend the smoothie ingredients and pour into a bowl of choice.  Top with all of the toppings, coconut chips, dried bananas, date syrup, chopped pistachios and live coconut yoghurt, drizzle to finish with delicious date syrup!  You can mix up the toppings to your liking.

Cacao & Apple Spiced Porridge

Cacao Spiced Apple Porridge

A real nourishing treat for the winter months!  There are no particular measurements for this recipe please adjust to taste and requirements.  You can also soak your oats in almond milk over night which I find makes them more enjoyable, but you don’t have to.

Cook up the oats with water or dairy free milk of choice, I would use Organic Almond Milk.  Once off the heat add a dash of Organic Vanilla Extract and some live coconut yoghurt to thicken.  Spoon in a couple of tbsp of raw cacao to taste and stir.  Divide into bowls and top with the chopped apples, chopped brazil nuts and raw organic manuka honey or maple syrup for a complete vegan option.  Sprinkle with some mixed spice and additional cinnamon and enjoy!

Please don’t feed the raw honey to under 1’s and the cacao is not suitable for very young children.  Please google the latest research on this!

Such a hearty treat for all the family!  Please note cacao is not recommended for very young children!  Enjoy! 😀

Whipped Shea Butter Cream

Organic Whipped Shea Butter and Almond Oil Recipe

This luxurious hand and body cream is amazing for the winter months.  The entire recipe consists of only two ingredients and its really easy to make.  It is particularly good for dry chapped hands, dry skin on your face and for any eczema or psoriasis you may have.

You will need:

A food processor

Storage Jar or Tin

Piping bag

Organic Cold Pressed Almond Oil (3-4tbsp)

Organic Shea Butter (1 1/2 cups)

I put about a cup and a half of shea butter into the food processor and blend on low power until smooth. 

Keep the machine running and add the almond oil into the shea a tbsp at a time, this will fluff up into a thick cream.  Add more almond oil if nessecary until you get the consistency you are after.  Keep checking, it literally takes a few seconds of blending to fluff up.

Spoon the mixture into a piping bag and pipe into your suitable container.  This will keep for a long time!  I would say about 6 months to a year.  Check it before use if its been a while. 

The cream is brilliant when used overnight after a nice relaxing hot bath.  I apply the cream to my hands throughout the day during the winter months to prevent cracking and dry skin.  I also add my own essential oil blends but please do your own research when it comes to essential oil use.  I add the oils after the initial shea blend and additional oils and butters can be added to the cream too.

It is important to use Organic Ingredients where affordable as they are so much kinder to your skin, the environment and the producers of such ingredients.  Also look out for Fair trade options for your ingredients as this will ensure you are putting your money towards good causes, small farms, cooperative groups etc. and helps to support those who need it the most.

Brazil Nut Chocolate Cake

The recipe for this chocolate cake is really easy and quick to prepare, there is no baking involved and it is made with fresh raw food and superfoods.  Its packed with nutritious ingredients and is a really quick and clean snack for the whole family.  Raw cacao is really nutritious and is well known for its high levels of antioxidants, its widely available online or in your local health shop.  Some larger supermarkets even stock it these days but to be honest you get more for your money online.  Indigo Herbs is a trusty brand and you can purchase from amazon at the link below –

The Ingredients

Cookie/cake base:

1 and 1/2 cups of Brazil nuts

1 cup of pitted soft medjool dates (don’t use the ones that have added sugar products)

2/3 cups of cacao powder

pinch of salt

Chocolate Frosting:

1/3-1/2 cup of medjool dates

1/4 cup of honey/agave or sweeter of choice

1/2 a medium ripe avocado

1/2 cup of cacao powder

So the method is really easy, you’ll need a powerful blender or a food processor.  Blend up the Brazil nuts first until they are pretty fine…don’t go to far or you will end up with a nut butter lol!  Add in the dates, the cacao powder and a pinch of salt…blend!  If the mixture is too dry and not clumping together (it depends on the dates) then add a little honey to get a dough like consistency that should stick together in your hand.

Remove from the food processor bowl in small amounts and push through a cookie cutter of choice, keep adding until its about 1cm thick.  Remove shaped piece from cookie cutter then repeat until finished.  To prepare the topping you need to blend the dates in the food processor until pureed, add the agave syrup or honey, avocado flesh and cacao powder.  Blend and scrape down until its completely blended together and looks like chocolate frosting.  Spread on top of the cookie cut cakes and serve with fruit on top.

You can keep it for a few days in the fridge but the strawberries will go a bit yuk! and the icing is made with avocado so best eaten as fresh as possible.  Be warned this cake is so nutrient dense your body will get full quickly so eat in small quantities! :-). Delicious!

Ok so here goes my super quick Indian curry recipe, this recipe was the result of me forgetting my Indian jar of sauce at the supermarket but I’m sure it was ten times tastier anyway than the jar I was supposed to pick up.  So here goes…

Ingredients

4 garlic cloves chopped or grated

1 knob of ginger chopped finely

2 green chilies, sliced, seeds included for extra heat (optional but don’t be a wimp!)

Cinnamon stick whole

4 cardamon pods

1 thickly sliced courgettes

1 thickly sliced red pepper

hot curry powder 3-4tbsp

Soy Cream

1 handful of cashew nuts

1 carton/tin of chopped tomatoes

4 cubes of frozen spinach

parsley (optional)

lime pickle and mango chutney or any other condiments

rice of choice

So chop and prepare everything and put a small amount of oil in the pan, stir in the garlic, ginger and green chilies, cook for 5 mins, stir in the cinnamon and cardamon pods and cook for a further 5 mins.

Add the chopped vegetables and cook for 10-15mins, add the chopped tomatoes, curry powder, frozen spinach, a dash of water , cook until the vegetables are tender.

Add a dash of soy cream, the cashew nuts and cook a further 5 mins, season and serve with the rice and condiments and parsely on top if you wish.

Greek Falafel & Salad Wraps

greek_wrapsThese are so super easy to make and I can’t personally take credit for them as my husband made them for us all.  All you need to do is chop your vegetables of choice, you can see what I used from the picture but Ive also listed the ingredients below.

Black Olive

Tomatoes

Hummus (lots of)

Cous cous (I used a premade one)

Cucumber

Red Pepper

Lettuce

Falafel

Tofu pieces (optional)

Tortilla Wraps

Avocado

Red Onion

So you quite simply chop everything up and serve into little dishes and everyone gets to make their own.  My kids love their vegetables raw and would rather eat them this way, its the cooked veg I have to bribe down them, they would eat plates and plates of raw veggies.  My youngest son is actually a cucumber addict lol!  He would eat cucumber for breakfast, lunch and dinner if he could. 🙂

So anyway, once you have all your veggies chopped and into dishes, put your wraps in some tinfoil and stick them in the oven for a few minutes to warm up.  Once warmed spread with hummus and top with the vegetables of your choice.  Wrap up and serve with the cous cous on the side.  I also added in a little spicy sauce.

Tom yum Thai soup vegan

Tom Yum Thai Soup

This was a really delicious soup that I made with the Tom Yum soup kit I purchased from the Chinese supermarket.  You could also purchase the ingredients separately and it’s so easy and simple to make.

Ingredients

tom yum soup kit –

1 x veggie stock cube

2 cups of mixed vegetables, I used red peppers, carrots and broccoli

4 x lemongrass stalks

1 piece of galangal

5 -6 lime leaves

2 x red chillies (really hot)

Green Thai curry paste (optional)

soy sauce

salt and pepper

1 handful of chopped coriander

Bring to the boil the stock cube and about 6-800mls of water, you can add more or less depending on the amount of vegetables you put in.  Next add the galangal, chopped chillies, and lime leaves. Simmer for five minutes then add a soy sauce to taste and green Thai curry paste to taste if you wish.  I also added a dash of almond milk at the end.  Sprinkle with chopped coriander.

Goji berry winter smoothie – youtube

A quick film in -9 conditions of me in my garden with my warm goji berry smoothie.  The ingredients for the smoothie are below the video.

Goji berry smoothie ingredients –

2 x bananas 🍌

1 tbsp of lucuma powder

1 tbsp of chia seeds

1 tbsp walnuts

1 Handful of goji berrys

orange juice/water or almond milk

Blend the lot together with the desired liquids and serve warm (to serve warm keep the blender running for 3-5mins on high, I use a vitamix, link below)

Blackberries (brambles) for lunch!

Seasonal warm smoothie made with freshly picked brambles (blackberries) that we found on our forest walk with the dogs today…I love those heavenly moments when nature provides something so delicious, nutritious and so unexpectedly!  🙂

So the ingredients were…

a handful of blackberries,

a green apple,

a pear,

tbsp of maca,

tbsp of goji berries,

tbsp of flax seeds,

tbsp of pumpkin seeds

and topped with half almond and half water…

In my vitamix I can blend it on high for a few minutes and it will warm it up because let’s face it it’s freezing outside and who wants to drink a cold smoothie heading into the winter months…not sure if this works in other blender models you can give it a try.

If you like it a litte sweeter you could add a date or two or a dollop of honey.  This recipe was shared between two people.


Kale super smoothie

Sorry it’s been a while folks, I’ve been busy studying a very basic course on Naturopathy, it’s just the tip of the iceberg but the knowledge I’ve gained has been very useful so far and it’s a good introduction to Natural medicine etc.  I hope to continue further along with some plant powered study! 😊

So here’s a quick smoothie I knocked up and it was so powerful I went for a run afterwards, my legs are still sore and that was a few days ago ha ha ha!  The black kale plucked fresh out of the garden still covered in the morning dew was absolutely amazing and I could feel the effects of the nutrition immediately lifting my  morning brain fog!  It seriously felt like a light coming on, it could also have been the ginseng kicking in!  I’m so impressed with this stuff it’s definitely on the garden growing list next year!

So I blended it in the vitamix with persimmons (I’m a persimmons addict at this time of year) and a whole orange, a tbsp of pumpkin seeds, flax seeds and some ginseng!  I topped up with water as I had ran out of almond milk!  You could use half almond milk if you prefer.

Locally grown vegetables

Lovely fresh vegetables from the the Gordon Castle estate local to us in Fochabers, Moray.  I would recommend a trip up to the recently restored gardens and lovely cafe/restaurant.  The shop near the car park usually sells a selection of seasonal foods grown in the gardens.  In the past we have purchased delicious potatoes, tomatoes, courgettes, pumpkin, squash, beans, artichokes and s fee other bits from the shop.

Christmas apple & blackberry gin

Christmas booze!  I don’t really drink alcohol anymore but I have guests to feed and water at Christmas time so I made this with the berries I foraged for the other day.  When purchasing the gin don’t go and purchase the best one you can find, seriously the cheapest bottle is perfect for this recipe.  In fact I was told the cheaper the better!  If your not an alcoholic drinker then you could also whizz it up into some fizzy sparkling water and serve.

Blackberries (Brambles) 3 or 4 handfuls

Apples chopped

Gin

Kilner Bottle

The blackberries were popped into a bowl and I added chopped apples of the same quantity, not weight quantity but equal visual quantity, a good two cups of sugar or more if you want it sweeter and squeezed it all into a kilner bottle which had been sterilised in a low heated oven for 30mins.  Pop it into the cupboard for three months or longer, shaking gently everyday for 1 month to help the sugar dissolve and then strain and enjoy in time for Christmas.  Obviously it might land on a different time of the year but I am making my gin at the end of September.  Here’s a good link to purchase 4 kilner bottles at a very reasonable price.  Shop around as supermarkets or high street stores always charge top dollar for these items.

Natural Coconut Water

Natural coconut water is so simple and so refreshing.  Fill up a sports flask with coconut water and half water for pre or post workout drink, also a great drink for the summer garden.  Its Autumn here just now though and I’m drinking my coconuts indoors before I move onto hot cacao drinks mmmm…

Coconut water is a great natural electrolyte, and it contains high amounts of potassium. It is also lower in carbohydrates — It only contains about 4.5% carbohydrates, whereas typical sports drinks can contain a 6%-8% carbohydrate concentration. (Dr. Axe)

My son drank two of these after school the other day, they are expensive fresh and I cant keep up with that demand ha ha!  You can buy a good high quality coconut water from the supermarket but most of them are heat processed and I try to avoid pasturised drinks where possible, simply because pasturisation in most cases = high heat which in turn destroys some of the nutrition (not all of the nutrition though), they are still beneficial to your health in some aspects though. Coconuts are not always easy to obtain fresh though and if I cant get them fresh the pasturised stuff is second best.

Also a great addition to smoothies and deserts, some raw desserts use coconut water in the blending processes.

Spicy mushrooms with peanut slaw wraps

I was looking for a really quick lunch fix the other day and this Asian infusion hit the spot!  Spicy mushrooms and onions with homemade peanut slaw wrapped in a corn wrap with additional spicy sauce if your brave enough.  I adapted a recipe from the book below – Rich Roll – The Plant Power Way.

Its a great book for easy family plant powered recipes and Rich Rolls story to fitness and health is very inspirational.  I’m also studying his plant powered educational course on the Mind Body Green website.  Its great for getting ideas for fueling your body for fitness and for daily meal ideas.  Click on the image to take you to his book.  Anyway back to my recipes, the ingredients are as follows…

Mini corn wraps

Mushrooms

Onions

Mini cabbages

Carrots

Peanut butter or Almond Butter

Tamari Sauce

Mirin

Rice Vinegar

Garlic Clove

Sunflower seeds

Shred the mini cabbage and the carrots and mix in a bowl, in a jar add equal amounts of soy, mirin and rice vinegar and a heaped tablespoon of peanut butter, close the jar and shake or use a small blender.  Add to the shredded cabbage and carrots and mix through.  Cook the mushrooms and onions in a little coconut oil and add a spicy sauce of choice.

Add the slaw to the corn wrap and top with mushrooms, wrap and enjoy!  Yummy! 🙂

Courgette pancakes

Tasty and mega simple courgette and pepper pancakes!  My kids always complain about courgettes but with a bit of good quality (next time I’ll make my own) BBQ sauce on the side these went down a treat and they didn’t even realise they were eating courgettes until the end! Lol! 😀

The inspiration for this recipe came from the Forks over Knives cookbook.  You can view and purchase the cookbook here at the link attached.
Grate two courgettes into a bowl and add 1/2 cup of wholemeal flour, finely diced red pepper and you could also add a tin of sweetcorn.  I didn’t have in the cupboard so I skipped this but would probably add it in next time for a little sweetness.  Season with salt and pepper and clump into little balls, fry in coconut oil in a non stick pan.  Serve with salad.  We had these topped with cream (soy cream) spinach sauce (recipe in the sides section) fried mushrooms and chipotle hot sauce!  We also had potatoes cooked in cauliflower cream on the side too!

Oh yummy!  😊

Two courgettes

1/2 cup of wholemeal flour

1 finely diced red pepper or colour of choice

1 small tin of sweetcorn

Veggie feast!

I was so hungry tonight and in desperate need of a veggie feast after a crappy food week!  My new vitamix professional blender arrived yesterday and anyone that owns one will understand my excitement and inspiration to get cooking again.  It is an amazing machine and I’ve waited very impatiently for three years to own one…finally my blender dreams have come true ha ha ha!  Check on the picture below for a full spec.

So to give my vitamix a workout I made a cauliflower cream sauce to cook my thinly sliced potatoes and onions in the oven and topped with nutritional yeast…also know as “cheese” sprinkles in my house!  😊

Then I blended up some garlic cloves with alpro soy cream and spinach.  I cooked this lightly in the pan to create the spinach sauce for the top of the courgette fritters.  These were so simple and I made them by grating the courgettes and adding peppers and seasonings, then fried lightly in a little coconut oil.  To top it off I added some fried mushrooms in the non stick (I try to use little oil) and chipotle sauce!  The tomatoes were fresh out of the greenhouse and were super sweet on the side.

I added a huge dollop of high quality BBQ sauce and a blob of coconut oil on top of the kids potatoes for some extra fats!  I also gave them a cheeky, cacao, banana, peanut butter with a dash of soy cream on the side smoothie which they had double helpings of.

A meal full of protein, iron, vitamins and about nine different veggie ingredients, it makes me feel super happy when my kids pack themselves full of nutritious foods.  They certainly don’t all of the time, kids are kids and they are free to eat as they wish but I hope to inspire them! 😍

Very Berry Smoothie Bowl

Very Berry Smoothie Bowl

I made this super delicious Superfood smoothie bowl for a lazy Sunday breakfast treat. I topped it off with a crunchy coconut oat granola, some dates, a spoon of peanut butter, flaxseeds and a slice of blood red orange (my fave!)

Check out the ingredients and instructions below to make your own delicious and nutritious smoothie bowl

Ingredients

Smoothie –

2 cups of frozen mixed berries

1 banana

2 tbsp of live coconut yoghurt

3-4tbsp of chia seeds

Other Toppings –

Flaxseeds

Medjool Dates

Peanut Butter

Oat Topping –

1 tbsp of coconut oil

1 cup oats

1/2 cup of shredded coconut

3-4 tbsp of sunflower seeds

1 tsp of Manuka honey or alternative sweetener


This recipe is super easy all you have to do is blend up all the smoothie ingredients with just enough water to create a thick smoothie.  Heat the coconut oil gently in a small pan and add the oats, coconut and sunflower seeds.  Stir lightly over a medium heat until lightly browned.  Add in the honey and stir through (do not cook!).

Pour the smoothie mixture into a bowl, top with the oat topping and the other toppings.  You can change the toppings and quantities to your liking should you wish to use other things.

Monthly Food Planning

Hey Everyone!

I have saved so much time and money by shopping and meal planning on a monthly basis. I wanted to share my method with you all and hopefully you will also benefit from this method in some way.

Budget

So lets talk money first! I budget £25 per person per week, my children are all eating fairly large meals now but If you had smaller children you could perhaps budget £25 per adult and £10-15 per child. It is entirely up to your own requirements and circumstances but I feel £25 a week per person works out well for us.

So as a family of five our monthly food budget is £125 x 4 = £500 per month

Meal Planning –

I use cookbooks and my own family recipes to plan our meals for the whole month. I usually just plan for Monday to Friday as the weekends can be pretty busy and we tend to eat out sometimes at the weekend so I like to keep options open for the weekend.

I plan all the evening meals, two soups for the week, two baked snacks(cake etc.) for the kids, I also buy several sandwich fillings and have a soup and sandwich most days. I keep the breakfasts pretty loose and buy in ingredients to have porridge, eggs, smoothies etc. Sometimes if I have extra time I will plan a few different smoothies for each week but I tend to make up my own super food smoothie recipes if I am not using my smoothie book.

I also buy in all of the kids school snacks, lunch box items and any other snacks that they like to eat. We don’t really buy biscuits and sweets apart from the odd bar of chocolate but do eat treats when we are out and about. I find if we stock lots of unhealthy snacks in the house the kids and myself included will eat them up too quickly.

I buy all the toiletries and household goods in bulk and any other items needed on a daily basis. I also like to bulk up on a couple of items for the larder/pantry cupboard and choose a couple of things to bulk up on per month such as rice, pasta, tinned foods etc. I find it works out cheaper this way and reduces my monthly shop overall in the long run.

Shopping –

I split the budget up as follows –

1 Monthly Bulk Shop – around £200-250

3 Weekly Mini Top Up Shops – £30-£50

1 Monthly Bulk Order of household, toiletries, larder/pantry goods (usually from amazon) – £100

Sometimes I will have money left over, sometimes I am slightly over budget but it all works out in the end.

This method saves me so much time, money and effort I can’t imagine swapping it for any other at the moment.

Chocolate Brownie Cake

Suitable for Vegans

This cake is soooo delicious and even without the butter and eggs it is so super moist! I would recommend it to anyone looking for a vegan friendly cake recipe and for anyone looking to cook less with eggs or butter.

Ingredients

1 3/4 cups of self raising flour

1 1/2 cups of golden caster sugar

3/4 cups cacao powder

Pinch of salt

1 1/2 cups of hazelnut milk (or other dairy free milk)

1/2 tsp of apple cider vinegar

1/2 cup of organic rapeseed oil

2 tsp of vanilla extract

1 cup of boiling water

Topping:

Hazelnuts

Cherries

4 Tbsp of Cacao Powder ( I used Pacari’s drinking cacao with ginger)

4 Tbsp of Golden Icing Sugar

My ingredients are always organic where possible.

Instructions

  1. Add the flour, sugar, cacao powder and salt to a mixing bowl (I use my trusty kitchen aid) and mix on a low speed together.
  2. Mix the milk and vinegar together in a jug and leave for a few minutes.
  3. Turn the flour mixture back on low speed and slowly add in the oil, milk and vinegar and the vanilla extract and blend together for a minute or so.
  4. Add in the boiling water and mix on low, increasing the speed to medium to ensure its all fully blended.
  5. Pour into a well oiled cake tin, I used a drop of the rapeseed oil to oil the tin.
  6. Bake on 160-180 for around 40 minutes. Poke a stick or clean butter knife through the center of the cake to see if it is cooked through. If it comes out clean its done, if its still sticky it needs some more time in the oven.
  7. Leave the cake to cool.
  8. Add the cacao and icing sugar together in a bowl and add a little hot water splash by splash to mix through to a paste like consistency.
  9. Spread the icing on the cake and decorate with nuts, cherries or fresh strawberries.
  10. Slice and enjoy! Remember to share 😉

Melanzane alla Parmigiana

Vegan friendly if you use dairy free cheese!

I love grilled aubergines, my kids are not big fans though I’m afraid but they usually manage a little of this dish due to the creamy cheesy texture. They also love a classic Italian tomato sauce so it tends to go down pretty well because of the flavours. You could also add in some sliced courgettes and perhaps roasted red peppers but I like it simple.

I’m afraid after slicing it up and serving it didn’t look as photogenic as I had hoped for ha ha ha but I can assure you it was delicious! 🙂

I made this dish as part of my monthly shopping meal plan which seems to be working pretty well to keep us well fed and organised. Check out my video in the video section or click the YouTube header at the top of the page. I hope you enjoy this recipe as much as I did.

Ingredients

2 aubergines sliced length ways

Olive oil

1 Tin of chopped tomatoes

3 cloves of garlic

2 balls of fresh mozzarella or dairy free equivalent

Parmesan or dairy free equivalent (roughly 100g)

Grated breadcrumbs

Chopped basil (optional)

Salt & pepper

Instructions

  1. Start by slicing and grilling the aubergine under the grill or in a George Foreman type grill with a little olive oil and seasonings. I love my Foreman I use it for so many things. Once all the aubergines are grilled set aside on a plate.
  2. Next you want to prepare the Italian tomato sauce. I would usually cook up my tomatoes and garlic etc. in a pan for this type of sauce but for super time saving prep I’m using my blender (Vitamix). Put the tinned tomatoes, garlic, a dash of olive oil and salt and pepper into a blender and blend until smooth. Set aside in a jug.
  3. Slice up the mozzerella or dairy free equivalent and set aside on a plate.
  4. That’s all the ingredients prepped now its time to assemble together lasagna style.
  5. Using a small lasagne dish pour a little tomato sauce into the bottom of the dish and place a layer of aubergine slices on top. Cover with a layer of mozzerella slices and a layer of tomato sauce. Repeat with the aubergine, mozzerella and tomato sauce until finished and top off with grated parmesan or dairy free equivalent and grated breadcrumbs. You can add some fresh chopped basil on the top here if you have to hand.
  6. Cook in a medium oven about 140-160 for 35 minutes or until completely browned and golden on the top. Serve up with some fresh salad or greens on the side. Enjoy and love!

Luxury Lemon Curd

Luxury Lemon Curd

This is such a delicious and super easy lemon curd recipe made without eggs and butter. I was using it for the inside of a coconut cake but you could also spread it on scones, toast or spoon a little on other desserts. Its a real treat! Enjoy!

Ingredients

Juice of 2 Lemons

Juice of 2 Limes

1 Cup of Sugar

1 Tbsp of Coconut Oil

1 Tbsp Coconut Cream

1/3 cup of Cornstarch

Pinch of Salt

Pinch of Tumeric

Glass jam jars

Instructions

  1. Add all of the ingredients to the pan and whisk on a medium heat, bring to the boil and lower the heat. Continue whisking on a low heat until it has thickened and all the ingredients are blended together. There should be no lumps left.
  2. I pop my glass jars in the oven on the lowest setting for 15-20mins to sterilise and I use a bowl of boiling water for the seals. Sterilise your glass jars in this way or your own way.
  3. Pour the thick curd into your dry, sterilised jars and cool a little before sealing. Store in the fridge.



Spicy Udon Noodle Soup

This is such an easy recipe to make and with the addition of the Udon noodle its such a filling and delicious soup. The Organic Miso has the added benefit of providing us with beneficial bacteria which may be good for our health and it also contains a range of other essential nutrients.

Ingredients

Vegetables – about 4-6 cups of chopped vegetables of your choice

Garlic – 4 cloves chopped

Red Chilli – 2-4 you can leave out

Spring Onions – 1 bunch chopped

White Miso – 2-3tbsp

I like to use my slow cooker for this recipe as it cooks while I am doing housework or other tasks. You can pop it on the slow cook or the rice setting a couple of times and leave it warming. You can also use a pan on the cooker or any other soup making device.

Add all of the chopped vegetables, garlic, chilli and spring onions to the pan or pot you are using and top up with enough water to cover the vegetables and a little more. Season well with salt and pepper and simmer until cooked through. You can also add a stock cube but I find the Miso adds enough flavour at the end of the cooking time.

Once the vegetables are all ready add the miso into the soup water and stir through well add more miso and hot water if necessary! Serve and enjoy!



Sunflower Mince Chilli

I loved this chili recipe made with the Sunflower Mince by ‘Just Whole Foods’ it was super delicious!  You can serve it up with a little cheese, rice and a side salad for a healthy meat free family meal.

To make the recipe you will need the following –

Ingredients

1 Packet of Just Whole Foods sunflower mince

Coconut oil

1 large onion chopped

1 red pepper chopped (optional)

4-5 cloves of garlic chopped

1 chilli seeds removed and chopped

1 tin of chopped tomatoes

1 tin of kidney beans

2 tbsp of tomato puree

2 tsp of ground cumin

2 tsp of paprika

1 tsp of chilli powder

3 tsp of dried chopped coriander

Cheese or dairy free cheese grated for the topping (optional)

Re hydrate the mince as per the packet instructions.  Add a little coconut oil to a large pan and fry the onion and red pepper (if using) on a medium heat for five minutes.  Add in the garlic and chilli and cook for a further 3-5 minutes.  Add in the re hydrated mince and cook lightly for 5 minutes.  Add in the chopped tomatoes, tomato puree, ground cumin, paprika, chilli powder, dried coriander and season with salt and pepper.  You can add more dried chilli if you like it spicy! Cook on a low heat for 20 minutes until all the spices have infused well.

You can serve up at this point with some rice and side salad but if using cheese or dairy free cheese, pour the chilli into a suitable oven container and top with the grated cheese, bake in the oven for 15-20mins on a medium heat until all the cheese is melted.

Scotch Broth Soup

Delicious and warming Scotch Broth soup made with organic beef brisket and fresh organic vegetables!  I also used the beef brisket from this recipe to make slow cooked Mexican beef fajita wraps with guacamole and salsa.  This gave me two nutritious meals out of one piece of meat and was such a time and money saver.

Just what a family budget and busy mum needs!

This recipe is so easy to make, put it into the slow cooker or rice cooker in the morning and its ready by lunch.  Then you can transfer the cooked beef from the soup into your slow cooker for another meal at night time.  So the beef brisket is used for the soup flavour first off and a little meat for the soup and then slow cooked into a spicy Mexican fajita filling.  Click here for the secondary recipe!  You could also used the stewed brisket for a variety of other meals instead of the Mexican fajitas!

ingredients

You are going to need the following for the Scotch Broth soup recipe:

1 large piece of Beef Brisket (family size)

2 Carrots

2 Parsnips

2 Large Potatoes

Beef Stock

1 large Leek or 2 small

Broth Mix (optional)

Salt & pepper or any other seasonings (herb salt)

Remove the string from the beef brisket if necessary and place into the slow cooker (rice cooker with slow cooking function is also an option). You can chop it up into smaller pieces if necessary but I put it in whole to save time and it works better for the evening recipe.

Chop up all of the carrots, parsnips and potatoes into small cubes and add to the slow cooker.  You can also use turnip or other vegetables or greens you have to hand. This is a great way to use up vegetables from your cupboards or fridge.

Slice up the onions and leeks and add those to the soup, top up with enough water to cover the beef and vegetables, about 2-3 cm above.  You can also add a handful of dried broth mix here but I had ran out – oops!  Set the slow cooker to a medium heat for 3-4 hrs.  Cook until all vegetables are tender and the brisket is cooked through.

Remove the brisket and slice a quarter of it off.  Place the remaining brisket aside for the dinner recipe.  I’ve made Mexican fajitas but you could use it for a variety of other meals.  Shred the small brisket piece and add to the soup, stir through, and add in some chopped herbs and additional seasonings if required.

Chocolate Milkshake Recipe

I love chocolate milk and especially this healthy homemade chocolate milk recipe made with juicy medjool dates and peanut butter powder!  This recipe is so quick to make and makes a great after school snack for the kids or a treat for the bigger kids at home 😉

ingredients

Serves 2/3

1 Banana

2/3 Pitted Medjool Dates

1 Tbsp Peanut Butter Powder

3 Tbsp of Raw Cacao Powder

2 Tbsp of Pumpkin Seeds

2 Tbsp of Sesame Seeds

1-2 cups of Almond Milk

Water

You can vary the ingredient quantities a little here and there to your tastes.

Blend all of the ingredients in a high powered blender and serve cold.  Adjust the almond milk or water for your preferred texture.  My favourite is a double cream texture.  In the winter I like to keep the blender on to serve it a little warmer, you could also warm it up on the cooker to make creamy hot chocolate.

Apple Fall Recipes

Awesome Apple Recipes

I have four delicious apple recipes to make use of my homegrown apples and apples from friends.  These recipes are so easy to make, even supervised children could make them.  My favourite is the toffee apple smoothie!  If anything try this recipe!

Toffee Apple Smoothie

2x chopped apples

2-4 x medjool dates

3+ cups of Hemp Milk (or other milk)

Dash of maple syrup

1 Tsp of Cinnamon

Add all of the ingredients into the blender and blend until smooth.  Add in a little extra milk if necessary.  Share with family and friends!

Peanut Butter Apple Sandwiches

Oh these are so delicious!  Be warned they are addictive! 😉

Apple Slices (seeds removed)

Crunchy Peanut Butter

Chopped Nuts/Dried fruit/fresh fruit

Slice and remove the seeds from the apples (you can see how I did this in the video above).  Spread a tbsp of peanut butter on one slice, top with chopped nuts or fruit etc. and top with another slice.  Serve like mini apple sandwiches!  These make great after school snacks.

Overnight Apple Oats

I love overnight oats, they are so easily digested once left to soak the whole night.

1 x apple

Organic Oats

Hemp Milk

Additional fruits/veg (I have used pomegranate seeds in the video some grated carrots would be good too)

Cinnamon & Allspice (optional)

Grate the apple into the glass jug or bowl and stir in the oats, add in the additional fruits/vegetables (grated) into the bowl.  I used pomegranate seeds as I needed to use them up from the fridge.  Add in enough oats for 4 people (or less) and top up with hemp milk.  I topped up the hemp milk up and over the oats so that they have enough moisture to soak up. 

In the morning you could pop the oats into a tray and warm in the oven.  I topped with some live coconut yogurt and a dash of maple syrup. Delicious!

Apple Turnovers

These are really handy little snacks for kids and are great for packed lunches or for school break snacks.  My kids had these all week!

Ready to roll puff pastry

Chopped Apples

Cinnamon

Allspice

Caster Sugar

Leave the pastry to come to room temperature and unroll.  You can also make your own pastry but for a super quick recipe ready to roll does the job nicely!  Cut the pastry into rectangles and then into smaller triangles (as seen in the video) then add in some chopped apples and a sprinkle of cinnamon, allspice and a sprinkle of sugar.  Fold in half and close with a fork pressing into the edges.  Sprinkle sugar over the top and serve!  😀
