Ok so the colour looks a bit yuk! But this was a delicious morning sweet kick!  Fresh coconut meat with banana and spirulina for an extra nutritional boost!  😄  My fave nutritional supplement at the moment…just throw all the ingredients below into a blender and whizz up for breakfast or great for a post run energy boost!

one banana

coconut water from one young green coconut (these look white in the super market as the hard green bit has been chopped)

flesh from the inside of the coconut

1 tsp spirulina (1/2 if first time)

Delicious peanut noodles with broccoli and sea same seeds.  So simple and such an easy meal for the family.

– 1 head of broccoli

– noodles (desired amount)

– coconut water 1 cup

– tamari sauce

– peanut butter 3 tbsp

– ginger (freshly grated) 1tbsp

– sesame seeds

– sesame oil

– chilli flakes (optional)

Boil the broccoli with the noodles in a pan of water and cook the sauce whilst these are cooking.  Add the coconut water, peanut butter, tamari sauce and ginger to the pan, cook until blended and thickened on a low heat for ten mins.  Add the noodles and broccoli to the sauce, stir, serve with drizzle of sea same oil and sesame seeds.

Enjoy!

Fruit salad smoothie

Fruity salad smoothie!  Great for breakfast…I made this quickly for the kids this morning as we were running late as per usual! 😊  It’s fruity and also contains Acai berry powder which adds an additional boost of nutrition.  Acai berry powder comes from the acai palm tree which is native to central and South America.  It’s packed with antioxidants, amino acids, fibre, essential fatty acids, vitamins and minerals.

– small handful of strawberries

– small handful of blueberries

– half a pear

– tablespoon of acai berry

– water or coconut water to top up

Add everything to the blender and blend, pour drink!  Enjoy!

Banan & lucuma smoothie

Banana, lucuma and apple smoothie!  I love banana smoothies, with the addition of lucuma and an apple this is one fruity treat!  Lucuma is a super nutritious Peruvian fruit which contains beta carotene, iron, vitamin B3, calcium and protein.  😊

– one banana

– one small apple

– coconut water

– 1 tablespoon of lucuma

Add all the ingredients in the smoothies, chop up if nessecary and top up with enough water to create the desired consistency!

Pour, drink and enjoy! 😊
