Awesome Apple Recipes

I have four delicious apple recipes to make use of my homegrown apples and apples from friends.  These recipes are so easy to make, even supervised children could make them.  My favourite is the toffee apple smoothie!  If anything try this recipe!

Toffee Apple Smoothie

2x chopped apples

2-4 x medjool dates

3+ cups of Hemp Milk (or other milk)

Dash of maple syrup

1 Tsp of Cinnamon

Add all of the ingredients into the blender and blend until smooth.  Add in a little extra milk if necessary.  Share with family and friends!

Peanut Butter Apple Sandwiches

Oh these are so delicious!  Be warned they are addictive! 😉

Apple Slices (seeds removed)

Crunchy Peanut Butter

Chopped Nuts/Dried fruit/fresh fruit

Slice and remove the seeds from the apples (you can see how I did this in the video above).  Spread a tbsp of peanut butter on one slice, top with chopped nuts or fruit etc. and top with another slice.  Serve like mini apple sandwiches!  These make great after school snacks.

Overnight Apple Oats

I love overnight oats, they are so easily digested once left to soak the whole night.

1 x apple

Organic Oats

Hemp Milk

Additional fruits/veg (I have used pomegranate seeds in the video some grated carrots would be good too)

Cinnamon & Allspice (optional)

Grate the apple into the glass jug or bowl and stir in the oats, add in the additional fruits/vegetables (grated) into the bowl.  I used pomegranate seeds as I needed to use them up from the fridge.  Add in enough oats for 4 people (or less) and top up with hemp milk.  I topped up the hemp milk up and over the oats so that they have enough moisture to soak up. 

In the morning you could pop the oats into a tray and warm in the oven.  I topped with some live coconut yogurt and a dash of maple syrup. Delicious!

Apple Turnovers

These are really handy little snacks for kids and are great for packed lunches or for school break snacks.  My kids had these all week!

Ready to roll puff pastry

Chopped Apples

Cinnamon

Allspice

Caster Sugar

Leave the pastry to come to room temperature and unroll.  You can also make your own pastry but for a super quick recipe ready to roll does the job nicely!  Cut the pastry into rectangles and then into smaller triangles (as seen in the video) then add in some chopped apples and a sprinkle of cinnamon, allspice and a sprinkle of sugar.  Fold in half and close with a fork pressing into the edges.  Sprinkle sugar over the top and serve!  😀

Speed Cleaning 15 Minutes

These fifteen minute power cleans are saving my house at the moment!  Check out this video for my fifteen minute clean on the kitchen clutter worktop!

Set your timers and go!!!

You might be wondering why I’m talking about cleaning when my passion is health and wellness, but looking at my health holistically and all that has an impact on it, I have to take my housework into consideration.

My housework causes me anxiety, stress and makes me feel like a failure if its not done!  I struggle for time though…I really struggle for time!  I am a busy mum of three messy little people and they need so much of my time and so much cleaning up after (which I don’t mind of course because I love them to pieces).

I can however spare fifteen minutes, knowing that in fifteen minutes I can get surprisingly a lot done!

  1. Pick the worst area of your home!  (yeah I mean it, go for it!)
  2. Set the timer to 15minutes!
  3. Ready Set, Clean!
  4. Clean likes there’s no tomorrow!  Solid cleaning for fifteen minutes! 
  5. Stop when the timer stops and leave the rest for the next session

You’ll be surprised how much you can get done in fifteen minutes, I know I was!  I was surprised!  If you don’t get a whole area clean, that’s fine just work on it next time you have a 15 minute block free!

I love taking advantage of kitchen gadgets to take the pressure off now and again!  I would recommend the Morphy Richards Accents Sear and Stew Slow Cooker 6.5L 48705 Brushed Stainless Steel Slowcooker it has worked so well for us and one of my favourite slow cooker recipes books is the Superfood Slow Cooker: Healthy wholefood meals from your slow cooker there are some amazingly healthy recipes in this book and it is one of my faves for slow cooker family recipes.  Check them out if you need inspiration!

Pinterest is also worth a search for ideas and I also love the BBC website search facility too.

Carrot Cake Overnight Oats

My kids absolutely love a warm breakfast when the weather is getting colder and it doesn’t really take that much longer to prepare, especially if you soak and prepare all the ingredients overnight!  I love to serve mine with a nutritious super-foods smoothie packed with greens or berries! 😉

We’ve been lucky to have a sunny spell the last few days but its been a bit cold and wet the last few weeks and its definitely felt like Autumn was well on her way!  I welcome with open arms of course because I absolutely love Autumn and everything that comes along with this beautiful season! 🙂

Try this recipe and variations for a warming breakfast that will fill you right up until lunchtime.

Carrot Cake Overnight Cakes_pin

Ingredients

1 cup of Porridge Oats

1 Cup of Quinoa Flakes

1 tbsp of Cinnamon (or quantity to taste)

1 Tbsp of Mixed Seeds

1 Finely Grated Carrot

Handful of Raisins (optional)

Chopped Walnuts (optional)

Almond Milk to cover and more to cook

I added all of the ingredients to a large bowl or other container, pour in enough milk to cover the mixture and stir.

Leave the mixture in a bowl in the fridge overnight and pop in a pan in the morning, add in some further milk or water to cook through and serve with maple syrup or honey and some additional chopped fruit if you desire.

I’ve added in a link to some quinoa flakes from Amazon if you can’t find them in your local shops.  They can be tricky to find at times.

Broad Bean Soup

Just what I needed today after a cold walk with the dogs and collecting leaves with my son for some leaf identification work we were doing.  Such a warming recipe, I served it up with a little drizzle of hemp oil but you could also use olive oil and perhaps some croutons.    mmmm!

Ingredients

3-4 cups of broad beans (frozen or fresh)

1 leek (chopped)

1 onion (chopped)

3 cloves of garlic (chopped)

1-2 red chillies (chopped)

2 tsp of cumin

1 tsp of tumeric

1 tsp of paprika

oat cream, or other dairy free cream ( a dash during blending, optional)

Green Smoothie Bowl

Add all the ingredients apart from the optional cream to the soup pot along with the stock cube and water to just over the vegetables.  Cook for 40-50 mins or until vegetables are tender and blend in the blender (be very careful when blending hot liquids, make sure the blender has the lid on securely) add in the cream of choice if you like to your desired consistency.  Serve with warm wholemeal bread or perhaps a toasted sandwich.

Vivera Steak Test

Trying out the new Vivera steak!  I must admit I don’t eat fake meats very often but I do really love the new Vivera producs!  They are fab!  My fave is the new kebab meat it is sooooo good! 🙂

I liked this one but not as much as the kebab meat!

They are so easy to make and make your skin super soft and the clay helps to clean your skin of toxins.  It really helps to keep my skin super soft and smooth and spot free!
