Kid friendly cabbage and tattie soup!

This was super yum with the addition of a couple of handfuls of broth mix and the quinoa at the end really thickened the soup and added a protein boost!  My son wanted to be in the picture I was taking for my blog ha ha he is so cute!  ❤️

Half a cabbage (fresh from my garden)

1 potato

to handfuls of broth mix (barley, split peas, rice, yellow lentils etc.)

two handfuls of quinoa

two small stock cubes (you could add whatever stock cubes you wish)

salt and pepper

Chop the cabbage and potato and season and cook for a few minutes in a splash of olive oil in the soup pan, add the desired water and stock cubes and the handfuls of broth mix…leave to simmer through until cooked through then add the two handfuls of quinoa and continue simmer until quinoa is cooked.  Purée if blender if desired!  My kids like it smooth so they can’t see and complain about the vegetables. 😊

Kids – Tree Loom

Kids outdoor weaving project!

So to try and get the kids away from the sky box I set up this outdoor weaving loom!  At first they couldn’t be bothered but after a while they totally got into it an were weaving all sorts into it…feathers, wool, grass, twigs!  I’ll repost a pic of the finished article…great fun and pretty addictive for the adults too! 😊

All you need is some twine and old wool and some ribbon if you have, the rest of the decorative weaving items can be found around the garden (feathers, grass, leaves, cones etc.)  wrap and tie the twine around the trees in any way you like as long as you can weave through…here’s my design.

weave your wool or ribbons over and under any sections you wish to create your woven project!

Strawberry “milk”shake

Strawberry milkshake!

Blend a cup of strawberries with 1 – 2 cups of almond milk and a dash of maple syrup and serve! 😎  If this was for breakfast You could add a banana in and a tsp of super powder and some extra water!

Aubergine & tomato tower

I love the taste of summer!  Pan fried aubergine and fresh Italian multicoloured tomatoes from the Keith deli (for those that are local)! 😊

Slice the aubergine into thick slices and pan fry in olive oil until cooked through and add a sprinkle of salt!  Slice the tomato and layer with the cooked aubergine!  Serve, yum!

Healthy movie snacks – popcorn!

Movie time – home made popcorn!

One for the kids…make sure you have adult supervision as the machine can get pretty hot during the cook! 😳

So cheap to make and great fun for the kids to make in the popcorn machine… 😊

Pop a small handful of kernels into a popcorn machine, switch on – simple!  Drizzle with sweetener of choice, we use the fruit sweetener in the picture, honey, agave etc.

Eat and enjoy! 😀

 



Coconut bean curry with rice and quinao

This was such a random meal but it turned out really delicious!  Roasted a sweet potato in tin foil in the oven on medium heat for about an hr then a cooked up some beans which had been soaking all night, you could use any white beans, added some chopped cabbage (from the garden) towards the end of the cooking time.  Stir fried some onion and garlic and added broccoli (from the garden) and a tin of sweet corn.  Then I stirred in a sachet of coconut cream, the solid stuff!  A splash of tamari and a tsp of sugar.  You could spice this up with a bit of chilli instead of the sugar, I’ve got kids to feed though and a spoonful of sugar helps the medicine go down as they say! Lol!  😊  The boys also ran out to the our rescue chickens to have a fried egg on top but that’s optional I guess!

Banana and spinach smoothie

Banana addict! Lol!

Banana, spinach and ginseng powder smoothie for my morning dash out the door with the dogs!  Good food – good energy!  ❤️  Ginseng is supposedly great for an energy boost!

– one banana

– one handful of baby spinach

– 1 tablespoon of ginseng

– rice milk or other dairy free milk to top up!

Pop everything in the blender, top up with desired amount of milk, blend and serve!


Broccoli and peanut noodles

Delicious peanut noodles with broccoli and sea same seeds.  So simple and such an easy meal for the family.

– 1 head of broccoli

– noodles (desired amount)

– coconut water 1 cup

– tamari sauce

– peanut butter 3 tbsp

– ginger (freshly grated) 1tbsp

– sesame seeds

– sesame oil

– chilli flakes (optional)

Boil the broccoli with the noodles in a pan of water and cook the sauce whilst these are cooking.  Add the coconut water, peanut butter, tamari sauce and ginger to the pan, cook until blended and thickened on a low heat for ten mins.  Add the noodles and broccoli to the sauce, stir, serve with drizzle of sea same oil and sesame seeds.
