I love this strawberry fridge jam it holds so much of the summer strawberry flavour and the vanilla works really well with the strawberries. Its so easy to make and contains way less sugar than traditional jam. This means it can’t be stored long term but it does last a few weeks in the fridge. Trust me though its not going to last a few weeks as its so delicious.

I used a vanilla bean pod for this recipe but you could also use a dash of vanilla essence in here instead. Vanilla extract also works really well but make sure you buy a high quality vanilla extract or you might not be getting the real thing. This recipe also works great in cakes and scones or even topping off ice cream or breakfast porridge its a real summer treat.

Strawberry & Vanilla Fridge Jam
350g of fresh strawberries
75g of golden caster sugar
Vanilla bean pod or vanilla extract
Top all the strawberries and add to the pan with the caster sugar. Bring to the boil and back down to a simmer. Remove all the scum that has risen to the top of the pan.
Split the vanilla pod down the middle and scrape out all the tiny black seeds. Add to the pan and add the split pod in also. The split pod can be removed before adding to the jam jars.
Simmer on a medium heat for 20 minutes until the jam has darkened slightly and has thicken in texture.
Leave to cool slightly and pour into sterilised jars while still warm. Pop in the fridge and use in around a week.
