Veg Patch Pizza

We love this delicious veg patch pizza using up all sorts of vegetables fresh from the garden. Its really delicious! I have made it with fresh tomato garlicky pizza sauce and topped off with creamy dolcelatti style cheese with a hint of chilli and to finish off I topped it off with some fresh rocket and some parmesan shavings. It was delicious!

You can use a variety of toppings from the garden on this pizza. We used courgette, aubergines, onions and mushrooms. We also made plain cheese and tomato pizzas and plain cheese and courgette pizzas. Get creative with your toppings!

I have used many pizza dough recipes over the years but this is my tweaked version that seems to just work. Its so very simple but creates the perfect thin pizza base with a little bit of fluffy doughy texture inside.

Veg Patch Pizza Ingredients

500g of strong white bread flour

1 tsp of dried yeast

1 tsp of flaked sea salt

300ml warm water

olive oil (preferrably organic cold pressed)

5 chopped garlic cloves

4 large roughly chopped tomatoes

a selection of sliced vegetables of choice

slices or gratings of cheese ( I used creamy doleclatti and cheddar)

Mix the flour, yeast and salt together and slowly add in the warm water to form a dough. I added in a little extra and was probably about 320ml. You want it sticky but not too sticky. Add in 1tbsp of olive oil. Add in a little extra flour if you have added in too much.

Knead for 10 minutes. I like to use the dough hook on my mixer and knead for 5 minutes at high speed.

Put a small amount of olive oil into a bowl and grease the bowl. Add soem to your hands also to help with handling the dough.

Pull and gather the dough from the mixing bowl and form into a ball shape. Pop in the bowl, clingfilm the lid and pop in a warm place to rise for an hour.

Add the tomatoes, garlic and 2-3tbsp of olive oil to a small pan and simmer gently on a medium heat. While cooking down chop the vegetables and preheat the oven to 240oc. You want a really hot oven for these pizzas.

Slice up all your vegetables and cheese into small slices and pieces.

Check on the tomato sauce and mash with a potato masher.

Oil up a chopping board or worktop space for rolling out your dough. Roll out your dough to a rustic round pizza shape. It doesnt have to be perfect.

Place your dough onto a greased pizza tray and add a half cupful of tomato sauce. Spread over the pizza and scatter with small handfuls of sliced vegetables and cheese.

Cook in the hot oven for 15mintues. Top the hot pizza with rocket or other salad and parmesan shavings.

    Looks great! I will have a go, because you include all the details eg use dough hook for 5 mins,and out oil on hands too.
