Smoked Salmon with lime & horseradish dressing

This is a lovely quick recipe I threw together for my lunch while Mary sat and played with her toys. You can also use fresh raw salmon for this recipe but for a speedy lunch I used a pack of Scottish Smoked Salmon. If you wanted to use raw fish it would have to be very very fresh.

This recipe works well in a wholemeal roll or wholemeal bread to make a lovely sandwich or is perfect on its own with some crusty bread on the side. I love this in a sandwich, its so quick and portable too.

Smoked Salmon with lime & horseradish dressing

Serves 2

200g of smoked salmon

1 lime

2tbsp of horseradish sauce

1 shallot finely chopped

1/2 of an avocado chopped into small pieces

A few cherry tomatoes

Black Pepper (no salt if your using smoked salmon)

Lay out all the slices of smoked salmon on a plate.

In a glass jar mix together the juice of 1 lime and 2tbps of horseradish sauce.

Sprinkle the salmon with the shallot, avocado and tomato pieces and drizzle over the lime and horseradish dressing.

Season with black pepper. I personally don’t add additional salt as its salty enough for me.

Serve in between two slices of wholemeal bread for a lovely sandwich or eat with crusty bread on the side.
