We love this easy strawberry sponge recipe as its so light and works really well with other fruits and fillings. I also used the sponge for the rhubarb cake I made recently and it gives you an idea on how you can use other different fruits and vegetables in this cake recipe. You could top the cake with just strawberries but I like to use a variety of whatever is available. Its a good idea to stick to seasonal berries where possible The recipe for the strawberry fridge jam is on my blog home page. I love summer strawberry recipes and could spend months creating them.

Summer Strawberry Sponge Cake
4 free range organic eggs
125g of golden caster sugar
150g of white spelt flour or white flour
Double Cream for whipping (any amount)
Vanilla essence
Strawberry Fridge Jam or other strwaberry jam
Strawberries & other fruits for the filling and topping

Instructions
Preheat the oven at 200oc (180oc fan oven).
Whisk the eggs and the sugar until light and fluffy. The eggs should be pale in colour.
Sift and fold the flour in very gently. You want to try and keep the cake batter as light as possible.
Pour into a medium sized greased cake tin and place in the preheated oven to bake for 30minutes or until cooked right through and golden on the top.
Leave the cake to cool completely and slice in half through the middle. You can also slice into three through the middle if you want a triple layered cake. I made a double layer for the video but a triple looks pretty impressive also.
Whisk up a batch of whipped cream in the food mixer using a whisk on high speed and add a dash of vanilla essence.
Spread over a dollop of strawberry jam into the middle of the cake and add a dollop of whipped cream to spread over also. Top with slices of fresh strawberries all over the middle and add the top slice on.
Add a dollop of fresh cream to the top of the cake and a couple tbsp of jam and spread over together around the top using a fork. Add slices of strawberries and other fruits to decorate and sprinkle with dusting of icing sugar.
Serve immediately and store any leftovers in the fridge.
