I was introduced to the healing powers of traditional bone broth in one of my postpartum recovery books. It focused on traditional healing foods from several cultures. One of those foods was bone broth and I made several batches of it to drink and use in soups and stews after my fourth daughter was born. I was so glad I did because it created such a delicious meal that I really enjoyed and provided my body with vital nutrients and healthy fats to heal properly afterwards. I had a lot of healing to go through after an emergency c-section and thank god for my bone broth at this time.

Rhubarb Cream Cake
This delicious butter free light sponge is lovely with the flully cream and sticky rhubarb drizzle. Rhubarb is definitely one of my favourite things about late Spring. I love a good Rhubarb pie but quickly get bored of making pie to use it all up. This little sponge cake was inspired by a Nordic sponge recipe and I think it works really well with the cream and rhubarb.

Kids Sharing Nibble Board
One of our favourite throw together lunches has to be the kids nibble board. It’s so simple and easy to make and you can use anything you have available in the fridge or cupboard. It looks a bit fancy but really its not and its also a great way to use up leftovers to save on food waste. We also love having these for a weekend evening movie snack.

Blueberry Oat Muffins
I made 18 of these delicious blueberry and oat muffins in the evening last week and by morning there were 6 left. Lets just say they went down well with the big kids in the house lol! They are made with loads of fresh blueberries, dates, oats and kefir milk. You can also use yoghurt if you don’t have kefir. I also used fresh buttermilk from making butter with the kids but you can buy buttermilk in the store if you don’t have fresh.

Butternut Chicken Soup
I love this comforting soup I made last week with a rotisserie chicken from the supermarket. It’s so simple and the buttery texture of the butternut squash, leeks and onions goes well with the shredded rottisserie chicken. I shredded both the legs and wings of the chicken, including the skin, into little pieces and added to the soup halfway through the cook. It added such a delicious flavour and a boost of protein.

Homemade Butter
There are so many options when it comes to buying butter and we really don’t have to make our own but there’s something deeply satisfying about making your own butter for your kitchen. It’s fun, super easy and you can add other ingredients to the butter to create your own flavoured butters.
All you need is a food mixer or a traditional butter churner and glass. It’s a fun activity for young kids to use the butter churner and it can be quite satisfying for them too to see the final results. They can then go on to make the butter milk pancakes or muffins recipe.
