Three grain porridge with maple syrup

img_1499

….and as you can see lots and lots of maple syrup!…a woman needs sugar sometimes! 😊  Super easy to make, it’s just porridge oats cooked with almond milk in the normal way with a little salt, I used pink Himalayan salt but sea salt is good!  Then I stir in a couple of tbsps of ground flaxseeds, chia seeds etc.  You can basically add whatever additional seeds or grains you fancy, I sometimes cook my porridge with half organic oats and half quinoa flakes…quinoa is a really good protein source and has a variety of other health benefits also see the link below for some further information.

Green Juice ingredients

img_1456

A quick pic of all the ingredients I used for some green juice, there’s a whole bag of curly green kale, one whole cucumber, four whole apples, and not pictured were two packs of cranberries and a whole lemon.

Chop everything up and pop in the juicer and it makes five small glasses or a few large ones.

I use a juicer similar to the one in the picture, a cold press juicer so no nutrition is destroyed in the making.  Click the link to view this one and others similar.

First youtube video

image

Ok so I did my first ever you tube video today, I seriously had loads of fun creating it…its not very interesting, I was really just trying all of my equipment out which is pretty pants!

I need a new camera, microphone, new mac to cope with some new video editing software and some video ideas.  It was great fun though and I laughed so much making it and editing it…the video quality is pretty pants but I will work on that for the next time, also my nail polish is super awful but I’ll get that sorted for next time!

Ok be kind people!  lots of love xxx

Melty “cheese” sandwich

img_1438

Oh yummy!

I don’t usually use fake meats and cheese because I don’t really feel they add that much to us nutritionally, I could be wrong but sometimes you just fancy some greedy foods!

I picked up some vibites beef slices in Holland and Barrett the other day so I had some vbites beef style slices with a violife cheese slice, tomatoes, jalapeños and some “mayo”.

Melted the lot in the foreman grill and served with a little salad

Chilli, corn bread and potatoes

img_1261

We are all soooo full up after our veggie chilli, roasted potatoes, corn bread, rice and cheese(violife).

wow where do I start…ok so first of all the corn bread recipe came from my new awesome book which I would totally recommend purchasing at the link below…it’s called “Peace and Parsnips – vegan cooking for everyone!”  And the recipes all have a different twist which makes things a bit interesting.

So for the 🌶 I used the following ingredients…

Large potatoes and olive oil

2 or 2 tbsp of coconut oil

Chopped garlic

Chopped onions

Green peppers chopped into cubes

Carrots chopped into cubes

Tin of mixed beans

Tin of kidney beans

2 x tins of tomatoes 🍅

3-4tbsp of cumin seeds or powder

2tbsp of smoked cayenne pepper

chilli flakes to taste

Salt and pepper

Potatoes

Slice the potatoes thinly almost straight through and repeat along the potato, brush with olive oil and season with salt and pepper.  Pop in a tray into the oven for 30-40mins until tender.

Cook the chopped onions and garlic in the coconut oil for a few minutes, add the chopped green peppers and carrots and cook for another few minutes.  Add both the tins of mixed beans and the tomatoes, cumin, cayenne pepper, chilli flakes to taste and the salt and pepper to season.  Bubble away on a low simmer for about 15-20mins, cook some rice and serve with the bread and potatoes.

Kids chocolate ice cream shake!

img_1253

Homemade raw chocolate ice cream shake!

It’s not exactly the weather for ice cream shakes tonight at -3 outside but at my sons request I said I would make him one so I managed to sneak in a few extras.  I added a huge two tbsp of alpro dairy free vanilla ice cream and topped it up with tonnes of almond milk, three tbsp of raw cacao powder, a splash of maple syrup and a couple of tbsp of chia seeds.  Blend it all up until just blended, don’t keep the blender  running too long or it will get too warm.

Serve with some grated dark chocolate on top if you fancy.

Blackberries (brambles) for lunch!

img_1124

Seasonal warm smoothie made with freshly picked brambles (blackberries) that we found on our forest walk with the dogs today…I love those heavenly moments when nature provides something so delicious, nutritious and so unexpectedly!  🙂

So the ingredients were…

a handful of blackberries,

a green apple,

a pear,

tbsp of maca,

tbsp of goji berries,

tbsp of flax seeds,

tbsp of pumpkin seeds

and topped with half almond and half water…

In my vitamix I can blend it on high for a few minutes and it will warm it up because let’s face it it’s freezing outside and who wants to drink a cold smoothie heading into the winter months…not sure if this works in other blender models you can give it a try.

If you like it a litte sweeter you could add a date or two or a dollop of honey.  This recipe was shared between two people.

Kale super smoothie

img_1099

Sorry it’s been a while folks, I’ve been busy studying a very basic course on Naturopathy, it’s just the tip of the iceberg but the knowledge I’ve gained has been very useful so far and it’s a good introduction to Natural medicine etc.  I hope to continue further along with some plant powered study! 😊

So here’s a quick smoothie I knocked up and it was so powerful I went for a run afterwards, my legs are still sore and that was a few days ago ha ha ha!  The black kale plucked fresh out of the garden still covered in the morning dew was absolutely amazing and I could feel the effects of the nutrition immediately lifting my  morning brain fog!  It seriously felt like a light coming on, it could also have been the ginseng kicking in!  I’m so impressed with this stuff it’s definitely on the garden growing list next year!

So I blended it in the vitamix with persimmons (I’m a persimmons addict at this time of year) and a whole orange, a tbsp of pumpkin seeds, flax seeds and some ginseng!  I topped up with water as I had ran out of almond milk!  You could use half almond milk if you prefer.

Black kale (cavolo Nero)

whole orange peeled

persimmons

tsp ginseng

tbsp pumpkin seeds

tbsp of flaxseeds

I should probably add I shared this with the kids!  It’s quite a lot to consume yourself!

Plant powered body fuel!  😎
